Sweet lupin seeds as rich source of protein with promising functional and nutritional properties have triggeredx000D
the interest of the food industry for a number of years now. However, to date, these proteins have not yet beenx000D
exploited to their full potential in the food sector as a thorough characterization and functionality screening ofx000D
the protein is lacking. Powell May International (PMI) is a Canada-based ingredient broker which would like tox000D
add sweet lupin seed protein to its product portfolio. The objective of this project is, hence, to develop ax000D
food-grade isolation procedure for the sweet lupin seed proteins and a thorough characterization of the proteinx000D
isolate. The characterization involves a full physicochemical and functional study of the obtained isolates. Thisx000D
project is a first step towards possible commercialization of an undervalued protein source that can be grown inx000D
Ontario. The timeliness and importance of this project for Canada can be illustrated by the potential this projectx000D
has in terms of (i) putting Canada-based PMI at the forefront of the international plant-based protein industryx000D
and (ii) higher valuation of a crop that can be incorporated in a crop rotation plan by farmers inx000D
Canada/Ontario. Furthermore, this project coincides with the greater demand of both industry as well asx000D
consumers for alternative plant-based proteins with excellent nutritional properties.
