As beer is the most popular alcoholic beverage in Canada and likely the major source of natural antioxidants,x000D
the investigation of these endogenous nutrients and antioxidants from various beers and their hops could bringx000D
Canadian beer forward as an internationally-competitive product with market advantage. The Canadian Maltingx000D
Barley Technical Centre (CMBTC) evaluate the quality of Canadian malting barley in the malting and brewingx000D
processes, simulating commercial scale production, delivering solutions to malt and brewing industries. To bex000D
competitive, the relatively smaller Canadian-owned brewers and maltsters must come up with innovativex000D
products or consistently enhance and highlight the values of their existing products. The present project aims tox000D
provide detailed quantitative antioxidant profile information and activities of beers produced by the CMBTC inx000D
comparison with commercial national brands, providing the company with vital tools for competitivex000D
advantage, value addition, and product development and innovation. Using the knowledge generated from thisx000D
project, the CMBTC will be able to help brewers develop new beer products; and obtain additional value fromx000D
the spent grain, which is currently sold as animal feed that sells for a very low profit margin, by producingx000D
health benefits products from it. The expertise for analysis of phenolic compounds will be provided by Dr.x000D
